Menu Plan Monday: Featuring Mexican Chicken Roll Ups



How is your summer menu going?  We still have a lot of grilling on the weekly menu!  I did put more creative thought into the menu this week and found some great ideas on Pinterest....Mexican Chicken Roll Ups and Veggie Bird Nests. 

We have a birthday this week...we are entering double digits!  The Third Grader Fourth Grader (*sigh*) turns ten.

I cannot believe it. 

For the big birthday boy, we are having pizza.  Snappy Tomato, The Beast

For the rest of the week, here is our menu.  We will be getting lots of goodies from our farm share this week, but I'm not sure what.  So, I've listed only main courses.  Also included is a recipe using our new Citrus and Savory rub on chicken kabobs!


Grilled Chicken Kabobs with Citrus and Savory Rub

Grilled Shrimp Kabobs Brushed with Butter and Lemon Juice

Grilled Tilapia

Veggie Bird Nest with Black Beans
 
Because I'm a BzzAgent, I get to try out lots of cool stuff.  This week I am trying Kroger Private Selection Citrus & Savory Rub on our chicken kabobs.  We used chicken, red onion and green peppers.

 
I rolled the chicken in the rub and put everything on wooden skewers. 
 
 
Grilled until cooked thoroughly.

 

The kabobs were perfect and had a very fresh, tangy taste.  You could really smell and taste the citrus, but it was not over powering.  The Fourth Grader and Baby Girl both ate the chicken, but Middle Child did not care for it.  My husband and I loved it.  There is a variety of rubs to try, so check them out soon!  It's a great idea for grilling on the Fourth of July.
