Tuna Avocado Salad on a Pita--Healthy!


I had some delicious tuna salad on a toasted pita at our local coffee shop today and was craving more tonight.  Luckily, I found a can of white albacore tuna in our pantry and decided to make my own, different, version. 

Mix these ingredients in a bowl:
1 can white albacore tuna
1 avocado
1 tsp curry powder

Place a 100% whole wheat tortilla in a heated skilled sprayed with olive oil.  While the tortilla is warming, place a piece of Havarti cheese in half of the tortilla like this:


Let the cheese melt just a bit and smear the tuna mixture over the cheese.

Peel and slice enough cucumber to cover half of the tortilla.


Fold over the tortilla and warm both sides.  The tortilla should be a little crunchy.

Enjoy!  My husband, hater of cucumbers and not a fan of tuna, loved this.  He recommended squeezing a little fresh lemon in the tuna mixture to cut the tuna taste.  I like it the way it is!  You decide.
