Menu Plan Monday



Today I went to the grocery today without a menu plan.  GASP!!  I was in a hurry and didn't want to make two trips this week.  So, I improvised, and stuck to basic meats.  Also, I had bought lots of vegetables at our vegetable co-op last week, so I had that to work with already. 


Here is our menu plan:

Butternut Squash Soup, Pigs in a Blanket, Broccoli and Carrots with Dip

Salmon and Steak with Mac and Cheese and Sauteed Kale, Spaghetti Squash and Garlic

Marinated Ranch Broiled Chicken with Salad and Quinoa

Stir Fry Chicken with Vegetables and Quinoa

Turkey Burgers and Vegetables

Make sure you check out the Sauteed Kale, Spaghetti Squash and Garlic.  It can be turned into a meal and is right at 100 calories.

If you are dining out this week and would like to try some place new and healthy, give Seasons 52 at the Rookwood Exchange in Cincinnati a try!  I was able to attend a special media dinner there last week and it was delicious.  Everything is fresh, organic and locally grown when possible.  Also, each menu item is 475 calories or less.  Look how much fun we had!
