We've had a busy weekend.
Swim meet.
Kings Island and the Coca-Cola Swelter Stopper.
Trip to Louisville and two birthday celebrations.
Working at the farm.
And now house cleaning and menu planning!
Here's what's on the menu board this week:
Chicken Salad Wraps, Macaroni and Cheese and Chard
Grilled Tilapia with Farm Vegetables
Breaded Baked Cod with Kale and Sweet Potatoes
Steak and Broccoli Stir Fry with Quinoa
Meatballs in Sauce with Salad and Rice
My friend shared her secret to make the breaded baked cod and it's delicious. Melt one part butter with one part lemon juice. Dip the cod in it and roll in panko crumbs. Bake until done. That's it. I like to cut the cod in strips.
