Easy Beef Bourguignon Tastes Like a Hearty Beef Stew

 What to make for dinner? 

Hmmmmmmm......

Look, how serious they are.  Perusing The Joy of Cooking together.  Oh my.

It was a rainy dreary day.  We had visions of a thick, hearty stew...even though it was July.  Hey, it was rainy and cold.  We were under a flash flood watch.

Beef Bourguignon!

This soup was perfect to pair with our crusty Kroger Artisan Potato Rosemary Loaf from BzzAgent.  (Thanks BzzAgent for letting me check out this bread, spread the word and share my review!  We loved it!)

 
And so, he began to prepare a scrumptious meal all the family would enjoy. 
 
Except a couple of the kids, who were impatient and ate frozen pizza. Oh well, more for us. 

Ingredients:
Colman's Beef Bourguignon Mix
2 Tablespoons thyme
1 Tablespoon Herbes De Provence
1 Cup red wine
1 pound lean meat (we used flank steak)
1 onion, chopped
1 cup chopped carrots
1/2 cup frozen peas
handful of flour to cook the meat
 



Spray a little cooking spray in a large stock pot.  Sprinkle the flank steak with flour, spray with cooking spray and cook until done. 

Add the onion, carrots and peas and cook until tender. 

Add the Colman's mix and follow the instructions on the amount of water to add.  Add a cup of red wine.  We used Merlot. 

Stir in the thyme and Herbs De Provence. Bring the soup to a boil and then simmer for about a half hour. 
 
Serve with crusty bread.  We loved the Kroger Artisan Potato Rosemary Bread.  It had a nice, heavy texture and the rosemary was very distinct.  The bread is delicious sliced and buttered, then dipped in the soup.
