Menu Plan Monday


We have a guest this week!  My friend and her daughter are staying the week so her daughter can attend ballet camp.  We've known each other since we were four years old...now we are going to be four-oh.  That's a long time.  I tried to come up with easy, basic but still tasty meals for the week. You can see I went all out for her with frozen pizza...that will be the night we go out for our birthdays.
 
Spaghetti with Meat Sauce, Croissants and Salad
 
Chicken Soft Tacos in the Slow Cooker (recipe below) and Sweet Potatoes
 
Frozen Pizza and Salad
 
BBQ Drumsticks, Garlic Mashed Potatoes and Salad
 
Hamburgers, Baked Beans, and Kale Chips

The slow cooker chicken soft tacos are super easy.  Combine chicken breast (I use four and sometimes throw in a few chicken thighs for taste), a jar of salsa, a can of corn, a can of black beans and a package of dry ranch dressing mix in the slow cooker.  Cook on low all day or high for a few hours until done.  Shred the chicken and serve on tortillas.  Add toppings.
