What's For Dinner Tonight--Chicken and Rice

Here's a quick and easy recipe for chicken and rice that's family friendly!  We all like that, right?

  • 6-7 chicken breasts, skin off
  • 1 cup rice
  • 1 can cream of mushroom soup
  • 2 3/4 cup water
  • salt and pepper to taste
  • 2 Tbs butter

Mix the soup, water and rice in a baking dish.  Lay the chicken breasts on top of the mixture.  Sprinkle with salt and pepper and place a pat of butter on top of each breast.

Bake at 350 until done.

That's it.  This was my favorite dish as a child because I loved the creamy rice.  My mom made it with skin on, bone in, chicken pieces.  I tried to make it healthier with skinless breasts.
