Menu Plan Monday

Happy Monday!  Are you wearing shorts today or a winter coat?

Green eggs for St.Patrick's Day!
Saturday we had warm breezes while the kids played outside all day and Sunday we were under a winter weather advisory from 8:00am until 7:00pm...with freezing rain that night.

In keeping with the cold weather theme, even though the first day of Spring is this Wednesday, we are having some heavy soups.

Right this moment I am eating some delicious Leek Potato Soup.  I had my doubts, but my friend Amy at In a Galaxy raved about it, so we gave it a try.  I pureed mine, which made it a nice St. Patrick's Day green.  She likes hers chunky and leaves it alone.  The kids even liked this soup.

Here is what we are having this week:

Bean Soup and Cornbread

Chili and Grilled Cheese

Chicken and Vegetable Stirfry with Quinoa

Turkey Burgers, Roasted Vegetables (squash, zucchini, kale and broccoli) and Mac/Cheese

Sausage and Vegetable Quiche (probably spinach)

If you need more help with a menu plan, be sure to check out Menu Plan Monday on the Organizing Junkie.  There are hundreds of menu plans listed.

Be sure to keep reading because I have a couple of great giveaways later this week.  If you like to watch things get run over by giant trucks and enjoy a good potato chip, you'll want to enter.

Intrigued?

Happy menu planning!
