In keeping with the cold weather theme, even though the first day of Spring is this Wednesday, we are having some heavy soups.
Right this moment I am eating some delicious Leek Potato Soup. I had my doubts, but my friend Amy at In a Galaxy raved about it, so we gave it a try. I pureed mine, which made it a nice St. Patrick's Day green. She likes hers chunky and leaves it alone. The kids even liked this soup.
Here is what we are having this week:
Bean Soup and Cornbread
Chili and Grilled Cheese
Chicken and Vegetable Stirfry with Quinoa
Turkey Burgers, Roasted Vegetables (squash, zucchini, kale and broccoli) and Mac/Cheese
Sausage and Vegetable Quiche (probably spinach)
