Menu Plan Monday


Menu planning after the holidays has helped us get back on track with school schedules and healthy eating habits...and grocery budgeting!  We got a little too relaxed with meals over the holiday break.  Here is what I found for the week.  Thank you Emy and Chasity for the suggestions!

Healthy Asian Glazed Chicken Drumsticks with Carrot Sticks, Salad, Pitas and Hummus
 
Chili
 
Homemade Chicken Nuggets, Mac and Cheese and Applesauce
 
Baked Beef Taquitos and Taco Salad
 
Skyline Chili using Morning Star Farms Meal Starters Grillers Recipe Crumbles and Whole Wheat Pasta (thank you BzzAgent for letting me try these for free)
 
Stirfry Steak and Vegetables with Quinoa

Do you get frustrated trying to make a healthy menu that is also kid friendly?  It is hard...especially if you have a picky eater or two.  I tried to accommodate both this week.  We are having a contest at the gym and I'll admit my downfall is snacking, coffee shop visits and eating too much 'kid friendly' fare. 

Overall, I think the menu this week will be good.  The day we have chicken nuggets with mac and cheese, I'll be putting those nuggets on a salad.  They will be baked.  The pasta used in the Skyline chili will be whole wheat.  And, if you are wondering why I have chili on the menu twice, one is Skyline style, which is mostly pasta, while the other is beef chili with no noodles.  Very different.
