Menu Plan Monday


It's October 1st!  Time to get out the Halloween decorations!  And, it's Monday!  Time for the menu plan! 

I discovered Colonel De and his wonderful seasonings at our local produce shop last year.  They are sold in small packets and are only a dollar or two each.  By seasoning my chicken, peppers and onions with a little of the Southwest Fajita seasoning I have fast and delicious fajitas.  I use the Far East Seasoning for the chicken and broccoli stir fry.  These are both super easy, fast and taste great.  You can order Colonel De seasoning on line or visit them at Findlay Market if you are in town. 

Whatever you use, sometimes less is more.  I have some fantastic stir fry recipes that call for mixing lots of spices and sauces and I end up with too much seasoning.  I love using the bare minimum because it's faster, usually fresher and often better for you. 

With that in mind, here is our menu for the week!

Sliders with green beans and mac/Cheese
Chicken Fajitas and Corn
Chicken and Broccoli Stir Fry with Rice
Baked Fish with Peas and Fruit
Pork Chops with  Kale and Mac/Cheese
