Are you ready for the week? It was hard sitting down and planning a menu this week. We had Baby Girl's birthday party yesterday and I am still recovering. Plus she is climbing all over me right now so it's extra hard to think, not to mention type.
Do you need an easy dish to feed lots of people? One that is fairly low fat and healthy? I used a recipe from a friend for the party yesterday and everyone seemed to love it. Throw the following in the slow cooker: about a pound or so of boneless chicken (I used thighs yesterday but you can use breasts or both), a can of black beans rinsed, a jar of salsa, a can of corn and a packet of powdered ranch dressing mix. Cook until the chicken is done, then shred the chicken and mix well. You can serve it with "scoop" style tortilla chips or make wraps with soft taco shells. Unless you start piling on sour cream and cheese, this should be low fat. It also makes a great topping for baked potatoes. We have it for dinner often.
Here is what is on the menu for this week:
Fast and Friendly Meatballs (made with turkey), mac and cheese, fresh fruit salad
Homemade chicken tenders, vegetables and hummus, fresh fruit salad
Skillet Red Beans and Rice from the Kentucky Fresh Cookbook
Vegetable fried rice with grilled chicken and steak
Stay at Home Pasta (spaghetti with at least 10 cloves of minced garlic sauteed....then add parsley and asiago cheese)
