Menu Plan Monday


This was our last day of Spring Break.  While we had a great time, I am glad to get back to a routine tomorrow----with the exception of Cub Scouts tomorrow night.  I can't say that I'm ready to get back to a room full of crazy screaming boys.  But, my Cub Scout enjoys it, so we'll be there. 

Did you do anything exciting over Spring Break?  One of our outings was the Cincinnati Art Museum.  It was quite an adventure!  We also went to the zoo, visited family out of town and hit the library and a park for a Nerf war. 

As things get back to normal this week, I've planned our menu so I can make the weekly grocery trip.  Hopefully, this will be a less expensive outing because I cleaned out the cabinets and took a little inventory.  I'm planning our menu around all of the pasta, rice and beans I didn't realize we had.  Here's what it looks like:

Leftover pulled pork from Easter with carrots, mac and cheese and spinach

Whole grain spaghetti with meat sauce and salad

Homemade baked chicken tenders, carrots and peas

Rice and bean enchiladas with corn and salad

Chili
(it's going to be very cool toward the middle of the week!  Maybe our last chili for a while)
