Barbie Bride Birthday Cake

My favorite cake of all time to make was a Barbie bride cake for my daughter's fourth birthday.  The easiest and most popular cake with my boys has been the ninja cake made to look like the LEGO Ninjago characters.

It is a tradition in our house for me to make each of the kids' birthday cakes.  I always ask them what they want and do my best to create a cake that is exactly what they request.  They are not always perfect, but I love making them and it reminds me of when my mom used to make my cakes.  Plus, they taste so much better than store bought.  Of course, when the icing is butter, shortening and powdered sugar...how can you go wrong?!

Barbie was my most favorite to make, and surpisingly easy.  I used 2 boxed cake mixes.

1)  Bake two 8 or 9 inch cakes using one mix.

2)  Bake the other mix in a 2 or 2 1/2 quart oven safe mixing bowl (I baked at 350 for about an hour).

3)  Let the cakes cool.  I like to bake one day and decorate the next.  If you do this, be sure to wrap the cakes in plastic so they don't dry out.

4)  Stack the layers and be sure to put icing between the layers.  I love Wilton's Buttercream Icing. This is the only one I use when I make a cake I am going to decorate.

5)  Wrap Barbie's legs in plastic wrap and poke her in the cake.  I bent her legs and did it at a slight angle because Barbie is a tall gal!

6)  Ice the cake with a 'crumb coat."  This is thin layer of icing to cover the entire cake.  It's okay if you get crumbs in it.  That's the point.  Put the cake in the refridgerator for an hour or so to set and then cover the cake with a thick layer of icing.  This is the layer that counts and should look nice.

7)  Decorate however you like!  I used a star tip to cover Barbie's bodice and parts of her dress.  Then I used a writing tip to add swirls.  This cake was easy because it is one color...white.
