I forgot about you guys last week. Well, I didn't forget. I just got super busy. We had a menu, but I did not post. This week I am planning for my busy week better by using the heck out of the slow cooker. I've already made a week's worth of little baggies of pretzels and grapes for lunches. Plus, I've frozen a bazillion jelly sandwiches. I am ready! I started working out again after hernia surgery and I've been working part time at a bakery. Time is a little scarce around here.
Here is our menu for the week. I made the chili tonight, using ground turkey and it was wonderful! I discovered it at a birthday party this weekend and cannot get enough of it. It's fairly low fat and high in protein. I also used peach mango salsa and the tomatoes were seasoned with chipotle.
I love oatmeal--especially steel cut oats. I tried two 'overnight' oatmeal recipes this weekend hoping for something better than frozen waffles for the kids. The one for steel cut oats uses the slow cooker to steam the oats by putting the ingredients in a glass cup and filling the slow cooker with water. The other was a make ahead and bake the next morning recipe for rolled oats. They were not bad. I love steel cut oats to be firm and these still turned out a little gummy. But, not bad for something easy. Here they are:

ever check out 365 days of slow cooking. some of the recipes I've tried out are pretty dang tasty!
Thanks for the tip! I will absolutely check it out. Schedules are not going to be slowing down any time soon and the slow cooker is a life saver....as long as I start it early in the day :)
