Menu Plan Monday



School is almost over!!  I have mixed feelings.  I am not dreading having my kids home all summer.  Shocking, I know....especially with some of the stories I write about them.  I like having a different schedule for the summer....not having to run them back and forth to school or Cub Scout meetings or get them up early.  But, I don't want them whining about playing video and computer games all the time when it's 85 degrees out and they should be dribbling a basketball in my driveway or making a giant chalk drawing on my sidewalk. 

Since the school year is winding down, we have lot of stuff to do!  Teacher gifts, end of year programs, parties!  Oh my!  With that in mind, I'm planning simple, fast and kid friendly meals this week.  I also added a carryout pizza item....which I've never added as a menu item before...yes, maybe on the weekend, but not as a planned weeknight dinner.  This weekend we had Papa Murphy's pizza, which seemed to be a lot more healthy and a lot less greasy than other restaurant pizzas.  I'm sure it's not exactly low fat, but it is what it is. 

Here is our menu for the week: 

Grilled Pork Chops with Basil-Garlic Rub, carrots and salad

Taco bar, corn cakes and refried beans (the kids LOVE taco bar night)

Papa Murphy's Pizza with salad

Grilled burgers, homemade sweet potato chips and Swiss chard

Slow Cooker BBQ, mac and cheese and fresh vegetables with dip

  1. Cool! I love reading your menus. I wish I had more time to post mine & recipes. I am working on it! Our menu this week: Monday: Spaghetti (with salad and bread); Tuesday: Chili Cornbread Casserole; Wednesday: Sloppy Joe Spaghetti Cups, Fries, Salad; Thursday: Bacon Chicken Ranch Pasta (Salad & Bread); Friday: Pork Steaks & veggies. Sometime this week I am also making sausage stuffing balls for the freezer (great pull out appetizer or lunch) and we will probably do homemade pizza for the weekend! Thanks for sharing!!
