Something special happened last week. We've been waiting a long time.
We got our Carmine's Family Style Cookbook in the mail.
We checked out this cookbook at the library a while back and loved it so much we had to have it. But, I am cheap, so it had to be the right price (translation: used plus free shipping) and then I also used my Amazon points to buy it. Did I mention I am cheap?
Of course, this week's menu has a Carmine's recipe! I can guarantee you that these recipes are not low fat, so I have to limit us to about one recipe a week (insert frowny face). In fact, I may have gained a couple pounds just looking at the pictures. Even Middle Child looked at one picture and declared it "Deeee-lish-ous!"
The meatballs I made last week were the Carmine's meatballs and to say they were fantabulous would be an understatement. We had no leftovers that night.

Eggplant Parmigiana (Carmine's) and salad
Roasted chicken with lemon garlic olive oil, carrots and peas
Homemade pizza with fresh vegetables and hummus
Crunchy taco bar, beans and corn cakes
Fish Stick-o-liscous (Paleo Comfort Foods cookbook) with green beans and fruit salad
