Menu Plan Monday





I'm trying to make a come back with this menu.  A come back from the dark side.  The dark side of eating.  Can you guess why?

The Thurmanator......2 lbs of meat...bacon, ground beef, and ham.  Quite a menagerie!
We had an awesome couples weekend with friends sans kids.  I got to eat, drink and be merry.  A little too much.  So, with that in mind, this week's menu is pretty healthy, yet basic.  After eating so many wonderful and gluttonous foods (think homemade potato chips covered in Alfredo sauce with blue cheese) it was kind of hard to think of light and healthy fare.  I searched menu boards, pinterest, other blogs.....I got bored.  And hungry. 

I would love to hear your favorite quick and healthy meal! 

Sauteed Chicken and vegetables with wild rice

Skillet Red Beans and Rice (leftover from last week's menu)

Garlic Chicken, mac and cheese with salad

Baked Meatballs, fruit salad and peas

Spinach, bean and cheese quesadillas with salad

  2. How do you make your quesadillas? My kids love them but I need to jazz ours up a little! You asked about the french bread pizzas...it's SO easy! I just buy the hearty multigrain french loaf from Kroger's bakery then split it into 8 pieces total (cut in into fourths, then halve the fourths), spread the bread with some jarred pizza sauce (we like Prego) sprinkle some oregano on then add shredded pizza cheese or provolone or both! I bake it at 400 for about 8 or so minutes, until the cheese is good and melty and then turn the broiler on low for a couple of minutes to get them good and bubbly. The boys love to take them for lunches!
