Fun Snack for Kids

It's hard to get things done with the kids around all the time.  But, if I'm going to be honest, even if they aren't around it's hard to get things done because I procrastinate a little.  I'm still painting my kitchen table and chairs.  I started them a month ago.  Hey, I finished the table and am almost done with one chair!

So, I was a little bored with painting chairs.....well, "chair."  There is not chairs yet.  I decided to take my procrastination skills to another level and got creative with lunch.

Peanut butter and honey pinwheels!  Anything to delay a project, right?

Or, at least that's what I call them.  They are a little bit more involved than just slapping together some PB & J, but the kids thought they were pretty cool and gobbled up every last bit, so I was happy.

First, use a rolling pin and roll out a slice of bread.

Next, slice off the crust using a pizza cutter.  Why not just use soft taco shells or tortillas?  I asked the same thing.....I pondered for a moment and then realized that if you used something else, it was going to make the pinwheel a little tougher and chewier.  The bread, even when rolled out, is still fairly soft and easy to bite without gnawing on it and causing the insides to squeeze out everywhere.  After making them, I figured out you really don't have to cut off the crust, just cut off the end crust when you are done rolling them (you'll see).

Next!  Smear peanut butter and honey on the bread.

Roll up the bread tightly and slice into little rolls.

That's it!  I served these with grapes.  Easy to make, though a little more labor intense, and they flew off the plate.  Middle Child also likes them with mayo, cheese and lettuce.  Hope your kids like them!
