Menu Plan Monday


I over planned last week.  Better than under planning right?  So, we never got to the Chicken Marsala or the Vegetarian Korma.  But, I will say that the Crockpot Beef Stroganoff was fantastic.  And, the Oven Fried Boneless Chicken Thighs from the Kentucky Fresh Cookbook were also a hit.  Last, but not least, the vegetarian Cincinnati Style Chili 3 Way (using Morning Star Veggie crumbles) was also a super easy crowd pleaser.  The kids loved all of these.  And, the next day for lunch, I made a baked potato and put the vegetarian chili on top.  Very good. 

One thing we did not like....the creamy vegetarian noodle bake.  The Second Grader did finish his, only because he wanted to hurry up and go to his friend's house!

Chicken Marsala from Carmine's Family Style Cookbook with salad
Santa Fe Chicken Packets with vegetables to dip in hummus
Skillet Beans and Rice from the Kentucky Fresh Cookbook 

I am very excited to try the Turkey Veggie Meatloaf Cups.  The picture shows mashed potatoes on the top swirled like icing.  To entice my kids to eat them, I may try it.  Very cute.

    1. Thank you! You might also like to know the Santa Fe Chicken packets were wonderful! Super easy too. We made way too made and used them the next couple days in wraps with a little salad dressing and lettuce for lunch. Delish!!
