Menu Plan Monday


We have some repeats this week.....we did not make it to the tilapia nor the veggie wraps, so we are trying those this week.  I caved and we went out for pizza after guitar lessons Thursday, read about it here if you need to feel better about dining out with your kids!  And, we ended up in the basement eating peanut butter sandwiches Friday night waiting out tornado warnings.  So, here is our menu for the week:

Keep It Light Tilapia (this is good stuff!!) with sweet potatoes and squash

Manicotti from Carmine's Family Style Cookbook (made using crepes, not pasta!) and salad

Mexican Pizza (this looks super easy) with green beans

Asian Mini Burgers with mashed potatoes and spinach


We are eating less red meat, but not going meatless.  I do like to get grass fed, natural beef when we do eat it.  I thought the kids would enjoy the Asian Mini Burgers and they sound pretty tasty.  Also, when I make the manicotti, I plan on making a double batch to freeze for another week.

Last week I made "Korean Stirfry" using fresh vegetables, sweet potato noodles, soy sauce and sesame oil.  I wanted to add some type of nuts to make it crunchy, but all I had was crunchy peanut butter.  I added a couple large spoonfuls and it totally changed the taste but it was delicious!!  So, if you want to liven up your stirfry, try it!
