Just an hour ago I realized...."Yikes, it's Sunday night!! I need a menu plan!" I love having a menu planned for my week. I don't always love planning it. But, it's one of those things that takes 20 minutes and then you reap the benefits all week.
We have two repeats from last week. The Pakistani Lentil Curry---because we never got to it. And, the vegetable beef stew because it was so good we want it again. For the stew, I browned the stew meat coated in flour and a little salt and pepper. Next I added broth, diced garlic, carrots, red cabbage and potatoes. I brought this to a boil and simmered for a while. I served it with homemade french bread and it was awesome. I had to bake another loaf of bread the next day because the boys loved it so much. It was not really a traditional vegetable beef stew, but it was fantastic. Don't go overboard on the cabbage though because it tends to add a bitter taste.
One other note....check out the recipe for the Bacon Potato Omelete....I cannot wait to try that one!
