Menu Plan Monday



It's over and I survived.  Fall Festival!  Thank you slow cooker...you sure did come in handy.  There was only one menu item we did not get to, and I've listed it as a repeat for this week.  The Creamy Beef Over Noodles.  This week will be much slower, but I'm still looking for meals that are not too time consuming because I have a lot of catching up to do. 

One other note.  For the past 3 weeks the Second Grader has requested "the good chicken."  He means the Grilled Chicken Thighs with Lemon-Herb Oil, listed below.  I usually roast it, not grill it....mostly because we are out of propane!  And, sometimes I just throw a whole chicken in so everyone gets a piece they like.  It's a super easy recipe and very good!

So, here's how our menu looks this week.

Creamy Beef Over Noodles with peas and corn (Slow Cooker!)
Grilled Chicken Thighs with Lemon-Herb Oil from the Kentucky Fresh Cookbook and green beans
Potatoe Bar with fresh vegetables and dip
Homemade Pizza (thanks to my mother in law who shared the Italien Basket she won at Fall Festival!)
Roasted Brined Chicken from the Kentucky Fresh Cookbook with sweet potatoes and swiss chard

We can use left over chicken in chicken enchiladas for the weekend!
