Menu Plan Monday


This week we are getting back to the basics and not trying any new recipes.  But, still trying to stay healthy and not too boring.  It's the last full week before school starts.  I am usually ready for the kids to go back to school, but, for the most part, it's been a great summer and I'm going to miss them when they go back.  That being said, I think we are all ready to get back to a routine. 

Before school starts, I have a huge laundry list of things to get done.  I'd like to paint poor baby girl's room.....who has been living in blue and yellow since the day she was born.  We are going with lavendar.  We need to get more organized and come up with a better system for backpacks, homework, teacher notes and all that good stuff.  Maybe a shelf system and hooks by the door?  I'd also love to paint our room.  Well, you can see why we are not trying any new or complicated recipes this week!

My oldest did ask me yesterday for "that gooooood chicken that tastes like sausage".  He would be referring to the Grilled Chicken Thighs with Lemon Herb Oil.  This is a fabulous recipe from The Kentucky Fresh Cookbook.  I had my eye on this cookbook for a long time and was lucky enough to win a copy from my friend Katie's blog The Little Things Journal

Monday:  Homemade chicken tenders (made with panko crumbs), mandarin oranges and salad
Tuesday:  Spaghetti and marinara sauce (using tomatoes from the garden), fresh bread and salad
Wednesday:  Grilled Chicken Thighs with Lemon Herb Oil The Kentucky Fresh Cookbook and vegetables
Thursday:  Homemade pizza
Friday:  Grilled cheese and tomatoe sandwiches and vegetables with ranch dip
