Menu Plan Monday


Where has the week gone?!  It's time for another menu plan.  I was so proud of us  last week because, for the most part, we stuck with our menu.  We did not have a Frittatta today, but instead had a wonderful turkey burger recipe from my mom.  And, I'm still on the quest to try a couple of different things instead of the boring old stand bys.  Last week, the cold beef noodle salad was fantastic!  My husband made the comment that it tasted like something from Matsuya.....a Japanese restaurant we used to frequent pre-kids.  And, the BBQ Chicken, Plantain and Brie wraps were delicious.  The kids did try these different dishes and liked the beef noodle salad the best.  I think most anything with lots of pasta would be a hit.

Monday:  Taco Bar (thank you Amy because we are totally copying your Monday Menu!)
Tuesday:  Grilled Bourbon Pork Tenderloin from The Kentucky Fresh Cookbook
Wednesday:  Grilled Chicken Thighs with Lemon Herb Oil The Kentucky Fresh Cookbook
Thursday:  Pantry Pasta for Two (but we will have to make this for five!) from The Pioneer Woman
Friday:  Potato Bar

  1. how did your taco bar turn out?? ours was fantastic! my sister in law made homemade pico de gallo, I made homemade salsa, the burrito skillet, she made a knockoff (that was right on) of Chipotle's rice and we had all kinds of fixings.....cheese, sour cream, avacado, lettuce, jalapenos....Yum!! Hope yours was delish too!

  2. We are doing it tonight! But, yours sounds way better! I've got tacos with all the toppings...no avacado though!! Black beans and that yummy corn meal stuff...fiesta corn? You add creamed corn to it. Happy 4th!!
