How's that time change workin' out for ya? Whew, it was a rough morning. Last night I stayed up late and at 12:30am I thought....YIKES, it's really 1:30am!! So, of course, 8:00am snuck up on me pretty fast. But, what better way to get ready for Monday morning right? Speaking of Monday.....I have our menu for the week. It is half meatless. And, this week I planned for 6 days because I cleaned out the fridge and am not sure how many leftovers we'll have from these menu items. I'm going to try to use a lot of leftovers for packing lunches.

Vegetarian Cincinnati Style Chili 3 Way (using Morning Star Veggie crumbles...Thanks Amy!)
Chicken Marsala from Carmine's Family Style Cookbook with salad and corn
Unfortunately, we've renewed the Carmine's Family Style Cookbook from the library several times and it as due back. We loved this cookbook so much that I am going to find a used copy on Amazon or Ebay and buy it. We've made one recipe a week out of it for the last three weeks. And, there are so many more I want to try. The basic sauce recipe is fantastic. They use a lot of garlic....so, automatically, I love them.
I usually don't list breakfast or snack items, but I have heard rave reviews about these Quinoa Breakfast Bars from my friend Amy at in a galaxy so I will be making them this week. They sound a like a great pre-workout snack as well as a good addition to my kids' lunch boxes.
