Menu Plan Monday

Are you enjoying this beautiful sunny Kentucky weather?  In February?!  As I'm sitting here, the sun is shining and it is very mild outside.....and my kids are playing the Wii.  Little do they know, they are about to change activities, so listen for the screams winds  of change.  

Last week everyone loved the Mexican Slow Cooker dish, so we are having that again toward the end of this week.  This was such an easy recipe and actually very healthy and low fat.  Here is the recipe.  Thanks to my awesome friend and workout partner for the recipe for sharing!

Throw the following ingredients into the slow cooker:

3-4 chicken breasts
1 jar of salsa
1 can of corn
1 can of black beans
1 packet of dry ranch dressing mix

I cooked it on high for 4 hours.  When the chicken is finished, use a couple of forks and shred the meat.  Mix it all together and you are done!  We used the "Scoops" tortilla chips to serve these.  I also made rice and turned mine into a burrito.  The kids used the chips and even just ate the chicken with forks.  You may add sour cream and cheese, but that kind of negates the whole "low fat/healthy" part of things.

Spaghetti and Meat Sauce with salad
Stir Fry Steak with rice and vegetables
Mexican Slow Cooker
Sauteed Chicken with pasta and vegetables
Mama's Asian Chicken (did not get to this last week)
Chili
*Italian Cookbook Surprise

*Say what???  My husband checked out an Italian cookbook from the library and suggest on his day off this week, we make something.......so, I'm sure I'll be posting about that soon.  I told him not to get too fancy on me.
