Last week I did not make a good plan.....I thought I did, but it was a lie. I made a menu with what we already had in the pantry, which is a great idea, but I forgot those little things. So, I went to the store....about 5 different times. And then there were the two times I called my husband at work and asked him to pick up milk on the way home....and dog food another night.So this week I made a plan for ALL seven days. Usually we have leftovers or sandwiches on the weekend, but I'm not leaving anything to chance here. Plus, it's one less thing I have to think about. Some of these menus are pretty heavy on the calories (check out the slow cooker bake!) but I'm going to reduce calories by using low fat ingredients, bake instead of fry and go lighter on the cheese. Here's what we are having:
White Chicken Enchiladas and beans
Mini Deep Dish Pizza from Pinterest (for the boys' sleepover)
Creamy Butter Chicken and roasted broccoli
Butternut Squash Soup with french bread
Grilled Cheese and Roasted Red Pepper & Tomato Soup (from Trader Joe's YUM!)
Homemade baked Chicken Tenders and vegetables

Jeez are you trying to totally blow up my diet with that tater tot bake??? I'm coming to have one small portion at your house so I don't have to make it myself and have the whole crock staring at me!!!

The white chicken enchiladas were FANTASTIC! I worried since there was no red or green sauce for the enchiladas, but the homemade white sauce was awesome. I used a whole chicken I roasted and just picked meat off. I think this made it more moist. And, the tator tot bake was very good. My oldest ate 2 bowls. It was a little heavy for me, but a GREAT comfort food!
