Speaking of change.... We do follow our menu pretty closely, since that's what I use to make my grocery list so there's not much else in the fridge to make, but we don't always do it on the day listed. So, I thought, why waste my energy typing the days of the week? So, here is our five item menu. On the weekends we usually have leftovers, sometimes take out or restaurant, or get creative. This week we are having soup and chili, which usually means lots of leftovers!

Quick Sausage, White Bean and Spinach Stew (this one never happened last week because we ended up with 2 days worth of chicken burritos plus we went out for pizza for the first day of school!)

I really wish my family would eat more meals like this, but there's no sense in wasting ingredients and time when I KNOW for the most part they will not...especially Liam! We had chili tonight and it was 90 degrees today....that's just how we roll ;)
ReplyDeleteDon't worry...we had chili this weekend and you can see it on here for this week too! And, sometimes I have mac and cheese on standby just in case. But, they usually do ok...one thing I do is load up the picky eaters on sides and maybe just a spoon or two of the maincourse. That way everyone tries it but if they don't like it, they have another option. Usually Asian foods or stirfry and burritos are ok though. They loved Katie's chicken burritos (enchiladas?).

ReplyDeleteHere's the recipe for the Cheeseburger Mashed Potato Bake. We haven't tried it yet, so I may change it up. Can't remember where I got it. Will let you know if it's good.

Cook time: 30 mins.
Serves: 8
Ingredients:
2 lbs. ground beef
1 medium onion, chopped
1 jar (1 lb.) Ragu ® Cheesy Double Cheddar Sauce
2 tsp. dry mustard
4 cups prepared mashed potatoes
1. Preheat oven to 425°. In 12-inch skillet, brown ground beef over medium-high heat; drain. Add onion and cook, stirring occasionally, 2 minutes. Stir in Double Cheddar Sauce, mustard and, if desired, salt and ground black pepper to taste. Simmer, stirring occasionally, 3 minutes or until heated through.
2. Turn into 2-quart casserole; evenly top with mashed potatoes. Bake 25 minutes or until potatoes are lightly golden.
