I've always been a big believer in weekly menu planning. Who can make a grocery list without a menu? But, with the start of summer, I've not been as strict about making a menu. Plus, I've gotten bored. You can only have spaghetti and pizza so many times before even the kids get tired of it. Well, since some of our garden vegetables are finally growing and the farmers markets are now more plentiful, I've decided to get back on track. I am participating in http://www.orgjunkie.com's/ Menu Plan Monday. I went to the grocery today and am all ready for the week! We are trying a couple of new things. A cold beef salad with noodles. Plantains. I don't think I've ever had a plantain, but am excited to try one! Here is our menu for the week.
Monday: Pizza, salad and fruit (ok, you know we had to kick off the week with a farewell to pizza)
Tuesday: Beef Noodle Salad bowls from http://www.thepioneerwoman.com/ and fruit
Wednesday: BBQ Chicken, Brie and Plantain Wraps from http://www.tastykitchen.com/
Thursday: Roasted chicken with herbs, kale with onions and rice
Friday: Sour Cream Enchiladas from http://www.tastykitchen.com/ and salad (This is a vegetarian dish but I will probably add some of the chicken from the previous night to the enchiladas)
Saturday: Leftovers or eat out
Sunday: Egg Frittatta with fresh vegetables and cheese
I am trying to be creative and explore new places for recipes. While I don't want to make anything too exotic or expensive, I do like the kids to try new things and keep our meals exciting. I have one of each in the kid eater department...one super adventurous and will try anything and one that won't eat it unless it's brown and boring. My adventurous eater has really surprised me with the things he enjoys...Indian curries, Chinese stir fries, the spicier the better with everything. The most 'out of the ordinary' recipe I have that at least one of my kids will eat is an Indian curry dish that tastes a lot like Vindaloo, served with basmati rice and naan bread....delicious! And just a tiny spicy kick...Mmm. I'd love to have that egg frittatta recipe if you are up to sharing....sounds delicious!
ReplyDelete"Brinner" is quite frequently on our menu for the week...I make a boatload of pancakes for dinner, and freeze the leftovers for breakfasts.
